CORNISH GOUDA CHEESES
Cornish Gouda is hand made on Talvan farm in Cornwall, using milk from the Spierings family pedigree herd of Holstein Friesian Cows.
Our making rooms are located only a few hundred metres away from the dairy. Every morning, fresh milk is pumped into a tank to be pasteurised, ready for cheese making. We then use traditional techniques passed down through family in the Netherlands, to craft our cheeses.
By the end of each day, the milk has been processed into a batch of Cornish Gouda, ready for the next stages of production; brining, waxing and maturation.
THE RANGE
The cheese develops its final character, texture and flavour throughout the maturation process.
During the first few months of maturation, the gouda is soft and creamy. As the cheese ages, it gradually loses moisture and hardens becoming crumbly with richer caramel and nutty flavours. Calcium lactate becomes more concentrated and small crunchy crystals form.
Our Cornish Gouda original range includes five age profiles: each at a distinctive stage of maturation.
